		<description>Diana:  I use to purchase pre-made Pumpkin Pancake dry mix at a local grocery store until I discovered this recipe.  The pre-mixed container was rather expensive and only served about 4 - I have 3 growing teenagers and this mix didn&#039;t work for well for us as hungry teens are usually quite grumpy.    Additionally, the only ingredient I had to purchase was the pumpkin as I always have everything else needed in the pantry.  I have also made waffles with this and the recipe doubles very easily - useful for weekend sleepovers.  
PS:  I use skim milk but it didn&#039;t make any difference at all.  
Keep up the good work - I always appreciate a good, healthy family-friendly recipe.</description>

		<description>You are right, there are so many issues to think about. However, in the case of locally grown produce I would rather have more of a market for the farmers who are already making a go with a smaller farm. Taking demand away from the huge factory farms and their bland produce that is shipped thousands of miles would be a win in my book. And I truly believe that when people taste food that is flavorful and fresh they will not be satisfied with what currently passes for produce at a lot of places. Which will further drive down demand for the products of factory farming.</description>

There was a book out about Wal-Mart a few years ago that discussed how the company will start buying a manufacturer&#039;s product and then the manufacturer hires more staff and spends a ton of money to ramp up for its huge new market, and then WM starts forcing them to cut prices drastically and the producer is kind of squeezed and in a somewhat precarious situation. I just hope that wouldn&#039;t happen to local/small/organic growers.</description>

I volunteered in the RFES cafeteria several years ago and was shocked by the types of lunches most were eating. sigh. Krista Collier does an awesome job with the 4th grade kids for health. You should consider starting a program for healthy nutrtion Diana, you&#039;d be awesome!!</description>
